Missoula Minestrone Plus

This thick Italian soup may be made with various ingredients, but it always includes chickpeas (also known as garbanzos).  A heavy sprinkling of parmesan cheese is also a must.


1 package of The Art of Good Food Missoula Minestrone Soup mix

1/2 cup salt pork, diced

1/4 lb ham, minced

1 cup fresh spinach, chopped

1 fresh tomato, diced (or 1 10-oz can, drained)

1 quart chicken broth

Parmesan cheese, grated


1. Quick soak and pressure cook beans as directed on the package.

2. Saute salt pork and discard the fat.

3. Combine all the ingredients except the pasta and parmesan cheese in the slow cooker. 

4. Add the chicken broth and water to cover.

5. Cook on high for one hour, then switch to low 6-8 hours or automatic.

6.  About a half hour before serving, add the pasta.

7.  Serve soup generously sprinkled with parmesan cheese.
